Spinach and Feta Frittata Muffins

These mini frittatas are the perfect make-ahead breakfast or snack and are absolutely delicious! They're packed full of flavour and will definitely leave you feeling satisfied

Ingredients:

4 eggs

1 tbsp milk

1/2 tsp dijon mustard sprinkle of salt sprinkle of pepper

1 clove of garlic

1 cup baby spinach, chopped

2 tbsp fresh dill, chopped

1/2 cup cherry tomatoes, quartered

1/4 cup reduced-fat feta, crumbled

Method:

  1. Preheat an oven to 180c

  2. In a mixing bowl whisk together the eggs, milk, mustard, salt and pepper until combined

  3. Add the garlic, spinach, dill, cherry tomatoes and feta to the bowl and mix until combined.

  4. Grease or line a 6 serve muffin tray and divide the egg mixture between the 6 muffins. Bake for 20 minutes
