Quinoa & Halloumi Fritters


These are packed full of flavour!! & thanks to the quinoa are actually filling 👏🏻 perfect for weekend brunch or some meal-prep friendly snacks during the week


Serves 4

Ingredients:

  • ½ cup quinoa

  • 1 cup water

  • 5 eggs

  • 2 large zucchinis

  • 100g halloumi, grated (use a firm one like cypress halloumi)

  • ¼ cup flour

  • ¼ cup chives, finely chopped

  • Pinch of salt

  • Pinch of pepper

  • 2 tsp olive oil


Method:

  1. Combine the quinoa and water together in a small saucepan. Cook over medium heat until the water dissolves

  2. Grate the zucchini and squeeze out as much excess water as possible

  3. Whisk together the eggs, zucchini, halloumi, flour, chives, salt and pepper. Then, mix in the cooked quinoa

  4. Add 1 tsp of the olive oil to a large frying pan over medium heat. Once hot add spoonfuls of the mixture and cook for 4 minutes on each side or until golden brown. Add the remaining oil and cook any leftover mixture

  5. Eat as a snack or serve with a rocket salad and some Greek yoghurt for breakfast or lunch
