Honey & Mustard One-Tray Chicken



We LOVE one-tray / one-pan meals, they are just so easy (& quick to wash up 😅) on busy weeknights. This recipe is definitely in the easy category as well as the delicious category 😆


Serves 4

Ingredients:

  • Juice of 1 lemon

  • 1 tbsp wholegrain mustard

  • 2 tbsp honey

  • 500g skinless chicken thigh

  • 4 medium potatoes, quartered

  • 2 bunches broccolini

  • 1 tsp olive oil


Method:

  1. Preheat an oven to 200c

  2. Combine the lemon juice, mustard and honey together in a large bowl. Whisk to combine. Place the potatoes and chicken in the bowl and coat with the marinade

  3. Spread the chicken and potato out on in a casserole dish or roasting tray and bake for 30 minutes.

  4. Then, add the broccolini to the oven dish with the chicken and drizzle with olive oil. Bake for a further 15 minutes
