Beef Burrito Bowl




How fun are burrito bowls! Such an easy yet fun dinner and they are sooo filling thanks to the rice and beans. Plus they have an abundance of flavour, of course!


On Sunday I meal prepped these and have been thoroughly enjoying having them as my lunches. You definitely need to give them a try


Serves 6

Ingredients:

· ½ cup brown rice

· 1 tsp olive oil

· 1 brown onion, diced

· 2 garlic cloves, finely chopped

· 500g extra lean beef mince

· 40g burrito seasoning

· 1 x 400g tin of red kidney beans, drained and rinsed

· ¼ cup taco sauce

· 2 cups iceberg lettuce, shredded

· 1 tomato, diced

· 1 Lebanese cucumber, diced

· 1 x 400g tin corn kernels, drained

· 1 avocado, diced

· 170g plain Greek yoghurt


Method:

1. Cook the rice according to packet instructions

2. Add the olive oil to a large frying pan over medium heat. Once hot add the onion and garlic and sauté until the onion is soft. Add the mince and burrito seasoning and cook for 5-6 minutes or until browned

3. Add the kidney beans and taco sauce to the pan and cook for a further 3-4 minutes

4. Divide the lettuce, tomato, cucumber, and corn between 6 bowls and top with the mince, avocado and yoghurt
