Cheesy flavoursome baked gnocchi goodness! This recipe is so delicious and easy to make
It's a great high protein vegetarian recipe and perfect for meal prep

500g store-bought potato gnocchi
1 tbsp extra virgin olive oil
½ tsp salt
½ tsp pepper
1 clove of garlic, finely chopped
350g mushrooms, sliced
250g cottage cheese
90g plain Greek yoghurt
140g baby spinach
½ cup reduced-fat shredded cheese
1. Preheat an oven to 220c.
2. Add half the olive oil to a large frying pan over medium heat. Once the pan is hot, add the gnocchi and cook until golden brown. Then, transfer the gnocchi to a bowl
3. Using the same pan, add the remaining olive oil to the pan with the salt, pepper and garlic. Once the pan is hot, add the mushrooms and spinach and cook for 5 minutes or until the mushrooms are soft and the spinach is wilted.
4. Stir in the cottage cheese and Greek yoghurt to the mushrooms. Add the gnocchi back in and stir through.
5. Transfer the gnocchi mixture to an oven-safe baking dish top with the cheese. Bake for 30 minutes or until golden brown on top.
